  • 1 medium size fish ( preferably garoupa )
  • 1 onion cut into small wedges
  • 2 sections garlic sliced thin, diagonally
  • 1 thumb sized piece ginge sliced thin and then cut in small strips
  • 1 red bell pepper, cut into strips
  • 1 red chilli, sliced diagonally
  • 1/3 to 3/4 water
  • 1 tbsp. corn starch salt
  • 2 tbsps. dark soy sauce fat for frying,
  • 3 tbsps. sugar ( or to taste )

InstructionsInstructions  Clean fish and sprinkle with salt ( inside stomach cavity and on cuter skin). Let stand for a few minutes. Meanwhile fry ginger, garlic and onion together. Add sliced bell pepper, sliced chille. Fry for a few minutes. Add water, soy sauce, vinegar, sugar and salt. Test for taste ( must be sweetish-sour-salty), adjust seasoning as necessary. Simmer for a few minutes to blend properly. Meanwhile, add enough water to cornstarch to make very thin paste. Add to sauce mixture, stirring constantly to avoid lumpiness. Cook until mixture thickens, and set aside. Drain fish and pat dry with absorbent paper. Fry in hot fat until brown and crisp Remove to platter and pour sweet-sour sauce over it. Garnish with chopped onion tops and parsley.
