  • 2 pounds raw shrimp, shelled and deveined
  • 4 cups beer
  • 2 tbsps. lemon juice
  • 1 tsp. salt
  • 3 tbsps. butter
  • 2 pimientos, sliced
  • 1/4 tsp. freshly ground black pepper
  • 1/2 cup diced onion
  • 1 cup uncooked rice
  • 3/4 cup diced green pepper
  • 1/2 pound mushrooms, sliced

InstructionsInstructions  Wash and drain the shrimp. Combine the shrimp, beer, lemon juice, slat, pepper and bay leaf. Bring to a boil and cook 5 minutes. Drain, serving the stock. Melt the butter in a saucepan, Add the onion and rice, cook over medium heat. stirring almost constantly until lightly browned. Add the reserved stock, green and mushrooms. Cover and cook over low heat 15 minutes or until rice is tender. Add the shrimp and pimientos. Taste for seasoning.
