  • 8-10 or 4-5 whole eggs egg yolks
  • 1/2 cup sugar
  • grated rind of lemon,or vanilla essence
  • caramel to line mould

InstructionsInstructions  Beat egg yolk ( or eggs ) with sugar until lemon-coloured. Add vanilla and continue to beat until well blended. Meanwhile,scald milk on top of double-boiler for about 10 to 15 minutes. Remove from fire and combine with egg mixture, mixing well to blend. Line flan mould with caramelized sugar. Pour egg mixture into this.Set in a pan haf-filled warm water and bake until mixture becomes firm or when knife inserted in the middle of the custard comes out clean.
