Camote Pudding

camotes, cooked
2 pound
butter

eggs,separated
1-2/3 cups
white sugar
1/4 cup
wine or brandy
Grated rind

nutmeg or mace

evaporated milk
1/4 cup

Instructions
Mash the camotes very well to remove all lumps and cream with butter. Beat the egg yolks well and add to potato mixture. Add the sugar, wine,lemon,rind and nutmeg. Add the milk to make a thin batter. The amount of milk may vary slightly depending on the consistency of the camotes but a thin batter is required. Beat the egg whites slightly until stiff but not dry. Fold them into the camote mixture and bake at 350'0 for 30 minutes. Serve 6.White camotes are not as sweet as the yellow ones and can easily be used as a potato substitute in some dishes. Thinly sliced peeled camotes can be fried like potato chips and they have a delightful flavor. We find them excellent to serve with barbecued spare ribs and any sweet sour meat dish.
