  • 1/2 lb. eggplant
  • 1/4 lb. pork sliced (lean)
  • 3 cloves garlaic
  • 1/2 tsp. salt
  • 1 tbsp. sugar
  • 2 tbsps. soy sauce
  • 2 tsps. cornstarch
  • 3 tbsps. water
  • 1/2 tsp. monosodium glutamate
  • Dash of pepper
  • 6 tbsps. oil
  • 1/2 fcup water
  • 1 tsp. wine

InstructionsInstructions  Cut eggplant into pieces about 1/2" x 1" and 1/4"thick. Mix pork slices with wine. Heat wine. Heat 4 tbsps. oil in frying pan. Saute the pork when oil is very hot. Add eggplant,salt,and 1/2 cup water. Cover and cook over medium fire for 10 minutes until eggplantis soft.Dissolve 2 teaspoons cornstarch in 3 tbsps;water and add to soy sauce,sugar,monosodium glutamate and 2 tablespoons oil. Pour sauce into center of frying pan,stir quickly and cook until it thickens. Then mix the sauce with the pork and eggplant and stir gently and evenly for a minute or so to mix thoroughly. Remove from pan and serve hot.
