  • 4 lbs. duck
  • 2 tbsps. spice-salt
  • 1-1/2 cups water
  • 1 slice ginger
  • 2 tbsps. yellow wine
  • 3 tbsps. red rice ( fro color )

InstructionsInstructions  After cleaning the duck, rub the spice-salt over the whole duck, inside and out. Let it stand in the refrigeratorfor two days. Boil the duck in boiling water; add ginger, wine and red rice ( wrapped in a cotton bag.) Cook for 1/2 hour, turn to small fire and continue cooking for another 1-1/2 hours. Cut into 1/2 by 1-1/2 inches pieces. Arrange the pieces nicely on a big plate. Heat and ticken the red sauce, then pour on the duck and serve.
