  • 1 lb. small shrimps
  • 1 tsp salt
  • 1/2 sugar
  • 1 pc. egg white
  • 2 tbsps. wine
  • 2 diced celery
  • 5 tbsps oil
  • 1 minced cooked ham

InstructionsInstructions  Shell and devein shrimps. Chill for half hour. Heat a table spoon oil in frying pan and saute the celery. Remove after two minutes.Mix the chilled shrimp with lightly beaten egg white and a tablespoon of wine. Heat remaining 4 tablespoons of oil in a clean frying pan. Just before the oil has reached the boiling point, put the shrimp in the pan and stir quickly for a minunte. Add remaining tablespoon of wine, salt and sugar. Mix. Add celery. Stir a few strokes. Place on a warm platter and sprinkle with minced ham, and garnish with parsley.
