  • 1 lb. fish fillets
  • A little seasoned flour
  • Salt and pepper
  • Lemon wedges
  • 1-1/2 oz. butter
  • 1 tbsp. chopped parsley
  • Sprigs of parsley
  • 1/4 cup mayonnaise
  • 1/4 cup sandwich spread

InstructionsInstructions  Skin fish if necessary and roll in the seasoned flour. Melt butter in a frying pan and when foaming add the fish fillets; fry on both sides until just cooked. Place fish on a heated serving plate and sprinkle with chopped parsley, salt and pepper. Garnish with lemon wedges and sprigs of parsley. Tartar Sauce:Mix together the mayonnaise and sandwich spread and spoon into a sauceboat. Serve with the fish fillets and a selection of hot cooked vegetables.
